No. You stay on every app. They're great for getting new customers through the door. The strategy is to move your repeat customers onto your own site so you stop paying commission on people who already know you.
Customers order through your site, pay by card, and the order prints straight to your kitchen. Same workflow as Just Eat. The difference is you keep 100% of the sale. You stay on the delivery apps for new customers, but your regulars order direct through your site where there's no commission.
